Nice work. I have the same trouble when photographing egrets -- their white is too bright for most apps on most days. I've had the best luck using the camera in Lightroom in HDR DNG mode and then editing (still in Lightroom) to bring out detail in the highlights. One of the drawbacks of shooting this way, though, is that the HDR DNG mode shoots three photos and then combines them, so if there's fast motion (like a flying egret), you may sometimes get ghosting.
