Tasted this at the Trader Joe's sampling booth and I was hooked! Bought some cantaloupe and made it today:

Cantaloupe + scallions + olive oil + apple cider vinegar + salt&pepper to taste = YUM. Some fresh mint or basil would also be tasty additions.

Gonna have to give that a try!! I've recently been enjoying watermelon with fresh mint and feta cheese.

Cheese and Spring Onion (Scallion) Muffins

280g plain flour
2 teaspoons baking powder
Half a teaspoon bicarbonate of soda
Half a teaspoon salt
1 teaspoon turmeric
Half a teaspoon cumin
120g cheddar cheese grated
Four spring onions sliced
Handful of sunflower seeds
Handful of pumpkin seeds

2 eggs
6 tablespoons sunflower oil
250ml sour cream (or full fat yoghurt)
Juice of half a lemon

Preheat oven to 200C/400F/Gas Mark 6. Line a 12 hole muffin tin with 12 paper cases.

Mix the eggs, sour cream, lemon juice and sunflower oil together in a jug.
Mix the rest of the ingredients together in a large bowl. Pour the egg mixture into the flour mixture and gently fold together. Don't overmix! Distribute evenly into the 12 muffin cases and bake for 20 minutes or until well risen and golden.

Use the flour, baking powder, bicarb and salt mixture with the eggs, sour cream, lemon juice and sunflower oil as a basis for any savoury muffins. Add different spices and seeds, a different cheese, grated carrot or courgette, sun dried tomatoes and make the recipe your own!
